Easy Onion Bhaji Recipe with mint chutney sauce

4 tablespoons fresh mint – finely chopped
OR 2 teaspoons dried mint
1 small onion – finely chopped
½ teaspoon chilli powder
1 teaspoon black pepper
1 teaspoon salt
4 tablespoons natural plain Greek yoghurt
2 teaspoons sugar
2 tablespoons cider vinegar

Step #1
Over a low heat, dissolve the sugar in the vinegar, & leave to cool.

Step #2
Add all the other ingredients into a bowl and mix together well.

Step #3
Add the sugar & vinegar mixture, and mix well. Chill in fridge for 1 hour.

300ml / ½ pint natural plain yoghurt
170g / 6oz chick pea flour (gram flour)
2 tspn chilli powder
½ tsp mustard powder
1 tsp salt
½ tsp ground black pepper
½ lemon – juice & zest
2 large onions
vegetable oil for deep frying

Step #1
Add all the ingredients (EXCEPT the onions and oil) into a bowl & mix well, removing all lumps. Cover & chill for 1-2 hours.

Step #2
Cut onions into thick wedges, break up the layers & add to the batter. Mix together well.

Step #3
Pre-heat oil to 175ºC / 345ºF. Add 1 tablespoon of onion mix to hot oil & cook for 5-7 mins. Drain on kitchen paper & serve with mint chutney sauce.
