Easy Chicken Curry Recipe – Easy Butter Chicken Recipe

MARINADE INGREDIENTS
850g / 30oz boneless chicken – cut into pieces
1 tbsp natural plain yoghurt
1 tbsp cider vinegar
1 tsp ground coriander
1 tsp ground cumin
1 tsp chilli powder
1 onion – finely minced
2 tsp ginger paste
2 tsp garlic paste
½ tsp salt
1 tsp ground tumeric

Step #1
Prick chicken pieces with a fork. Mix all marinade ingredients together & rub into chicken. Leave in fridge for a few hours or ideally overnight.

SAUCE INGREDIENTS
4 large tomatoes – finely cubed
4 tbsp butter
1 tbsp fresh cream
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground ginger
1 tsp chilli powder
1 tsp ground black pepper
2 tsp fresh chillis – finely chopped
½ tsp salt
½ tsp sugar
fresh coriander – chopped (garnish)

Step #2
Melt half the butter on medium heat in heavy-bottomed pan. Add chicken marinade mix & cook until all the liquid has evaporated.

Step #3
Add the remaining butter to the pan, along with the cumin, coriander, chilli, pepper & ginger powders. Fry for 3 mins.

Step #4
Add the tomatoes, salt & sugar. Cook uncovered until the sauce
thickens & the fat separates.

Step #5
Add the fresh chillis & cream. Mix well. Simmer on a low heat for 5 mins.

Step #6
Sprinkle on chopped coriander leaves and serve.
